A nose of bitter almond and white flowers, delicate from first contact. Aeration reveals further maturity, with notes of poached white fruit, preserved lemon and Timut pepper. The palate is generous, but the bitters are present, trailing and underlining the still somewhat firm bubbles. A fine Parilla-style veal sweetbread with a lemon drizzle would be the perfect companion.
