"L'Unique" comes from Bouzy's Grands Crus, 100% pinot noir. The brilliant, limpid, lemon-gold color is imbued with a swarm of bubbles, heralding perfect effervescence. Intense and complex, the nose is made up of ripe fruit aromas (golden apple, quince, yellow peach, reine claude) that give way to candied citrus marmalade and calissons d'Aix. The attack on the palate is frank, homogeneous, chalky, with a minerality that remains major. The finish is long, rich and salivating. Serve as an aperitif or with mulard duck breast with pine nuts.
