A superb deep gold color for this champagne, with bubbles that are still magnificently lively and fine. On the nose, notes of pastry, toasted pistachios, candied lemon and rhubarb tart evolve into notes of undergrowth, the hallmark of old, fully-fledged champagnes. On the palate, the bubbles are microscopic, revealing flavors. This wine has the amplitude, finesse and savoriness of mature champagnes. Without a trace of fatigue, it offers a superb root-like finish. We're under its spell and dreaming of a plate of sliced pata negra bellota y bellota to accompany it.
