A blend of 3/4 pinot noir and 1/4 pinot meunier for this champagne made in equal parts from the 2015 and 2014 harvests. The nose confirms the maturity of this wine, which already has 6 years of cellaring behind it. On the palate, salinity and acidity combine with flavors of turmeric and porcini mushrooms. The chalky finish makes it a perfect match for a not-too-mature chaource.

Perseval-Farge

The Perseval-Farge estate, located in Chamery, cultivates 4 hectares of vineyards spread across 6 lieux-dits in the heart of the Montagne de Reims. Committed to environmental stewardship from the very beginning, Benoist—along with his wife Isabelle and son Henry—obtained organic certification for the estate in 2022. On clay and sandy soils, they cultivate the region’s main grape varieties as well as a significant proportion of heritage varieties: Pinot Gris, Petit Meslier, and Arbane. Winemaking and aging—conducted entirely or partially in oak barrels—along with a 40% proportion of reserve wine, result in a rich and balanced portfolio.
