The Domaine Perseval-Farge, established in Chamery since the 18th century, a premier cru in the heart of the Montagne de Reims, vinifies 4 ha of vines. Working since 1990 with integrated viticulture (a close link between sustainable development and respect for the environment) and certified organic since the 2022 harvest, it harmoniously cultivates the region's king grape varieties: chardonnay, pinot noir and pinot meunier. Benoist Perseval is also planting old varieties, such as pinot gris (fromenteau), petit meslier and arbane, which account for 10% of the vineyard. It's a good way of arousing curiosity about blends between yesterday's and today's grape varieties, and of responding to the demands of climate change.
