Gault&Millau's review
Founded in 1960, the company has been run by Michel Chauvet and Sylvie Lancelot since 1996. They took over the 4 ha estate created by Sylvie's parents. Here, the grape varieties planted on the terroirs of Cramant, Avize, Chouilly and Oger are 100% Chardonnay, with an average vine age of 30 years. The traditional cellar is dug into the chalk on a mound behind the house, where some 40,000 bottles are stored each year. Ancestral practices remain firmly rooted, and the domaine disgorges all its cuvées by hand. All the wines are well marked by their Côte des Blancs origins, with fresh, saline and iodized flavors, ideal for aperitifs.
