The nose seems finely iodized and smoky. On the palate, fine bubbles accompany a saline texture and appetizing bitterness. The gravitational flow of juice during the pressing of the harvest has preserved the freshness of this cuvée, which reveals its density, supported by a judicious woodiness acquired during vinification in barrel. This champagne deserves to wait a few more years before serving it with a supreme of Bresse chicken with morels.

Lacourte-Godbillon
Géraldine Lacourte and Richard Desvignes, her husband, have managed the family vineyard since 2006, with 8.2 hectares of Pinot Noir and Chardonnay planted mainly on the slopes of Ecueil, on the Montagne de Reims. Most of the plots are grassed and the domain claims a return to "natural" plowing and amendments, including short pruning, debudding, and green harvesting practices. No insecticide or herbicide is used on the estate. In the cellars part of the vinification is carried out in oak barrels.
