Gault&Millau's review
Jérôme Prévost learned his trade with Anselme Selosse. There, he learned absolute respect for the grape, with homeopathic treatment of the vines at the right moment, just as biodynamic viticulture does with respect for the environment. The science of maturing, a once-traditional method so often abandoned in favor of the simpler-to-manage stainless steel tank, is also crucial to the production of great Champagnes. He finally settled in Gueux on 2.2 hectares. His grape variety is exclusively pinot meunier, picked at perfect maturity, to which he gives his letters of nobility.
