A pure, fine, racy nose for this champagne made from Pinot Meunier grapes. A far cry from purely fruity expressions of the grape variety. Notes of white bread, juicy pear and salinity are perceptible right from the nose. The palate is fine, straightforward, pure and crystalline, with a saline finish of yellow lemon and a touch of stone fruit. This lively wine, evolving with every second, should be decanted if you're lucky enough to drink it now, or kept for a few years and reserved for fellow wine lovers.

Jérôme Prévost learned his trade with Anselme Selosse. There, he learned absolute respect for the grape, with homeopathic treatment of the vines at the right moment, just as biodynamic viticulture does with respect for the environment. The science of maturing, a once-traditional method so often abandoned in favor of the simpler-to-manage stainless steel tank, is also crucial to the production of great Champagnes. He finally settled in Gueux on 2.2 hectares. His grape variety is exclusively pinot meunier, picked at perfect maturity, to which he gives his letters of nobility.
