A great wine where salinity is the sign of a fine expression of terroir. A terroir that brings out the full expression of the grape varieties (75% rolle, 25% grenache blanc). It's fresh, of course, but without excess; it's warm, but measured, even a little shaggy. In a word, it's the perfect balance at the time of our tasting. A wine that opens up gently without overdoing it, all subtlety. Serve with a fine pan-fried scallops.
