Like a classical dancer, graceful and precise, the wine opens with aromas of ripe fruit and spices, enhanced by the freshness of eucalyptus and licorice. A change of pace on the palate, where the dancer adopts a more urban style. The presence of bubbles energizes the material before a persistent finish, with delicate bitters before a whiff of fresh mint. This champagne would go well with cooked seafood and fine shellfish.
