Notes of pastry, yellow and white fruits, underlined by aromas of fresh hazelnut, contribute to a fine, delicate bouquet. Crisp, juicy white fruit dominates the palate. Silky, full-bodied and fresh at the same time. Attractive bubbles accompany a lingering finish in which the dosage is perfectly integrated. Attractive bitters add extra sapidity.

H. Billiot & Fils

Laetitia Billiot, in the 5th generation, runs a small 4.7 ha estate in Ambonnay, on the southern slopes of the Montagne de Reims. The Billiot brand has existed since 1937, and the seven cuvées marketed are all from the Ambonnay grand cru. Vinification is carried out without malolactic fermentation to preserve all the freshness of the village's reputedly rich and aromatic wines. With almost 75% Pinot Noir planted, this grape variety is used in all the estate's blends and, of course, in the Blanc de Noir wines. In all, the estate produces just 30,000 bottles a year.
