Notes of pastry, yellow and white fruits, underlined by aromas of fresh hazelnut, contribute to a fine, delicate bouquet. Crisp, juicy white fruit dominates the palate. Silky, full-bodied and fresh at the same time. Attractive bubbles accompany a lingering finish in which the dosage is perfectly integrated. Attractive bitters add extra sapidity.

H. Billiot & Fils

This harvester-manipulator operates a small 4.7-hectare estate in Ambonnay, on the southern slopes of the Montagne de Reims. The Billiot brand has existed since 1937, and the seven cuvées marketed are all from the Ambonnay grand cru. Vinification is carried out without malolactic fermentation to preserve all the freshness of the village's reputedly rich and aromatic wines. With almost 75% pinot noir planted, this grape variety is used in all our blends, and of course in our blanc de noirs. The wide range extends from the "Tradition" cuvée to the exceptional "Essence du Billiot", available in very limited quantities (less than 500 bottles per year). In all, the domaine produces just 30,000 bottles each year.
