A blend of equal parts chardonnay and pinot noir for this champagne with acidity still present, but tart freshness. The wine comes exclusively from the 2016 harvest, and diffuses minerality and salinity right through to the chalky finish. Wait another year or two before serving with veal tartar and langoustines.
