The first aromas of apple pie, candied citrus fruit and toast are delightful. The palate is more rounded, with a creamy texture supported by elegant bubbles. On the finish, a chalky note and delicate bitters add chew and open the appetite. We can easily imagine this champagne with a spider crab in jelly.
