Ghislain Payer & Fille
This small, 4-hectare estate in Fleury-la-Rivière, in the Marne valley, has been making wine for six generations. They retain a cooperative spirit, and part of their harvest is deposited here to produce their brut réserve and 2008 vintages. Non-vintage cuvées are aged for a minimum of three to ten years before release. The vineyard is dominated by pinot meunier, but chardonnay and pinot noir also find their place on this chalk terroir with its many marine fossils. The house also offers a red-colored Champagne ratafia, which is extremely rare in Champagne, and which we invite you to taste to seduce and surprise your guests.
