Gault&Millau's review
Founded in 1937 and now run by the third generation, represented by Amandine and Cyril Collard, this small operation of just 2 ha (on 11 plots), based in Bouzy, cultivates grand cru vines. Organic certification was obtained in 2016, followed by biodynamic certification, giving the wines extra quality, purity and finesse. Each year, the house produces between 12,000 and 16,000 bottles of its own. Seasonal events are organized, such as "Vigneron d'un jour" (vine lifting and trellising), all culminating in a tasting of the house wines.

Presentation
Historically, Gaston Collard worked his plots and sold his grapes. After his untimely death, his wife Lucie took over. In 1982, their children, Michel and Jackie, decided to make their own champagnes, becoming récoltant-manipulants and creating the Gaston Collard brand. In 2012, Michel's children, Cyril and Amandine, took over management of the estate and decided to practice responsible, respectful agriculture. They work the land according to nature's rhythm, using only natural, organic fertilizers and indigenous yeasts.
