Presentation

Cyril Collard's grandfather, Gaston, used to sell his grapes to the wine trade, before his father and uncle started making their own champagnes in 1982. A sommelier by trade and holder of a BPREA diploma - two years of which were spent alternating with his excellent neighbor Benoît Lahaye - Cyril took over the family business in 2012 with his sister. From the outset, he converted the estate to organic and then biodynamic viticulture. Since then, on the plots scattered around his village and the surrounding villages, he has been digging the furrow of a viticulture that is highly respectful of the environment, fruit and people, to give birth to champagnes vinified as naturally as possible. His range includes three cuvées - zero dosage, extra brut and brut - all based on the same blend of 90% pinot noir and 10% chardonnay, as well as a blanc de blancs, a blanc de noirs and a sulfite-free maceration rosé in the d'Exception range. Our ambition? Sublimate Bouzy's terroirs, also through still wines - without bubbles - such as white and red Bouzy, not forgetting the vins doux naturels known as ratafia.
