The superb golden yellow colour is accompanied by thin bubbles. The nose is intense and offers dominant notes of Viennese pastry due to the majority Chardonnay; the Pinot Noir then brings structure to the wine. This cuvée is very well balanced on the palate with plenty of substance and a generous finish. This gourmet champagne could be tasted with a sea bass in a salt crust.

Duménil

Founded in 1874 in Chigny-les-Roses by Élie Duménil, the winery is now run by the fifth generation, Frédérique Poret. With the support of her husband Hugues, she manages this independent estate, which is now located in Sacy. The vineyard comprises 8 hectares spread across 30 plots and 3 villages: Chigny-les-Roses, Ludes, and Rilly-la-Montagne. Chardonnay, Meunier, and Pinot Noir are grown in equal proportions, using sustainable farming practices. The finesse, fruitiness, and roundness of their champagnes reflect a expertise they love to pair with local specialties. Their champagnes are best enjoyed not only as an aperitif but also throughout a meal.
