A base wine from 2015, 30% of a perpetual reserve initiated in 1986 and old vines: that's the technical description of this Cramant. The color and persistence of the bubbles in the glass are superb. The nose is both powerful and fine, developing minty notes of rare freshness. On the palate, the breed takes things up a notch, combining velvety smoothness and presence with the chalky tension of the village's vines. Superb. Enjoy on its own or with scallops cooked on cobblestones, Monsieur Piège style.
