Rich biscuits on the nose, at first with yellow fruits and a hint of honey. The bubbles are large with a persistent mousse. Silky poached apples spiced with cinnamon on the smooth palate, with vibrant acidity carrying a sweet spot of stone fruits, piqued by lingering cake spices and sprinkles of salt and pepper.

This is the generic name of the champagnes sold by the cooperative winery created in 1956 by 22 members in Colombé-le-Sec. However, Charles Clément was the name of the founding member. Nowadays, it is composed of 59 winemakers harvesting 110 hectares spread on the slopes around Bar-sur-Aube.
