From Côte des Bar, the blend of this cuvée has a majority of Pinot Meunier. The nose is fresh and evokes pastries with notes of candied pineapple, “Calissons d’Aix” and sugared almonds. The attack on the palate is soft and vinous; there is a creamy mouthfeel This fine vintage champagne would match well with grilled blue lobster and spring vegetables.

Binon Coquard

Coming from a family of winemakers, Maxime Binon founded his winery in Spoy in 2000. He produced his first vintage at the age of twenty-four, in 2003. His sister Cyrielle joined him in 2012. Located on the Côte des Bar, the 6.5 hectares of vineyards are planted on Kimmeridgian clay-limestone soils. The vineyard is managed using sustainable practices, without chemical weed control. Pinot Noir accounts for 70% of the vineyard. The estate offers tours and walks through the vineyards, as well as two vacation rentals located in Champignol-lez-Mondeville, about ten kilometers from the estate.
