Cocoa nibs, Bourdaloue tart and salted butter caramel blend beautifully. A vintage of full expression, gourmand and complex. Smooth, silky texture on the palate. The barrel accompanies this 2016 perfectly, and the precision of the finish and the finesse of the effervescence hit the nail on the head. An assertive gastronomic dimension, to be served with halibut roasted on the bone, crosnes and citrus butter.
