Two grands crus (70% chardonnay from Mesnil-sur-Oger and 30% pinot noir from Bouzy) make up this cuvée, for which the winemaker insists on keeping the harvest blends a secret. The nose is expressive, with notes of pear and marshmallow. The saline, creamy palate reveals citrus and combava flavors. The discreet dosage makes this champagne ideal with sushi or white fish ceviche.
