Remarkable Restaurant William Ledeuil, who was one of Guy Savoy's most loyal lieutenants before opening The Kitchen Galerie at the turn of the century, has never betrayed the spirit of this technical yet fusion cuisine, for which he won our Chef of the Year award in 2010. It's obviously not quite as modern and innovative as it was fifteen years ago, but there's still plenty of pleasure to be had in this attractive dining room, where a young, committed staff is hard at work. With an eye firmly set on Asia and no terrestrial frontiers, the cuisine is obviously marked by citrus fruits, acids, spiciness and broths (the chef's trademark) in a joyful melting-pot where we come across a very pretty zucchini flower stuffed with zucchini and poultry, cockles and green curry and a yellow pollack combined with ginger, rhubarb and oyster cream. For dessert, it's impossible to go without the white chocolate-wasabi ice cream, which has remained on the menu since the restaurant opened, and is paired with different fruits according to the season. The large international clientele appreciates this exercise, which has the (very good) taste of remaining particularly accessible, especially at lunchtime. The wine cellar is well thought out to match this highly distinctive cuisine, and the service is discreet and smiling.
