Chef's Restaurant
Located between Champagne and Burgundy, this institution is also a major draw for visitors to Colombey-les-Deux-Églises. There, Jean-Baptiste Natali, along with his wife, his trusted maître d’ Chan, and his teams, cultivates a way of life that evokes, for example, the pleasure of reading and salivating over a menu. The menu features beautiful seasonal dishes, with occasional nods to Italy, where the chef’s family hails from. A nod to the General is evident in the “Je vous ai compris” menu, which captures the essence with oysters in a shallot cream sauce, paired with a pear and champagne emulsion, lobster in a broth made from the heads, served with pistou ice cream; squab with artichokes, Poivrade peppers, chanterelle mushrooms, and red currant jus; and a dessert of tender pear with gianduja and raspberry sorbet.
