Chef's Restaurant Jean-Baptiste Ceccaldi's superb estate, with its houses tucked away in the woods where you can experience luxury in Corsican style, clearly deserves this high-level table and the great chefs who have succeeded one another there: Stéphane Pitré, whom Gault&Millau has been following in Paris (Louis in the 9ᵉ) since his installation as winner of the Dotation, is indeed one of them. Although he's not Corsican, the Breton chef has taken on board everything that makes his cuisine so charming and appealing: the authenticity of the produce, simplicity of presentation and respect for tradition. Every evening, he and his teams deliver a beautiful polyphonic recital, with carefully crafted dishes that live up to their promise: aziminu 2024 (Corsican bouillabaisse destructured with fillet of paddlefish and rouille), red mullet steamed in its own broth water with criste-marine heads on sparkling butter, cochon nustrale veiled in its own fat and ears in rennet confit with red wine, strawberries and pea ice cream spiced up with wasabi, and chocolate ripe beet sorbet with cocoa and oxalis, all of which demonstrate the temperament and undoubted talent of pastry chef Valentin Mifort. A large cellar with a focus on the island, with a wide choice by the glass from well-known estates. Continuity should logically lead to a third toque next year.
