Prestige Restaurant Along with his mentor Alain Ducasse, he laid the foundations for natural cuisine when the Plaza Athénée reopened in 2014, propelling and maintaining this no-meat-on-the-menu cuisine to the top of its game, while thrilling audiences with his obvious panache. After losing himself for a time in the depths of the Perche, in Catherine Deneuve's former home (Domaine de Primard), without ever really finding his audience, this gifted chef returned to the heart of the big city, a stone's throw from the Invalides and the ministries, in the place of the former Garance. He has lost none of his exceptional technique and great sensitivity, no longer forbidding himself anything except products that are not of the highest quality, and delivers a breathtaking demonstration from amuse-bouche to magnificent desserts: a carrot-oyster-spruce combination with total balance and delicate flavors, the oyster barely warmed, the carrots as if candied, an infinitely tender octopus with its mousseline of octopus skins and mustard, before a poultry dish with exquisite cooking and softness, fennel and cuttlefish, all tied together with a cuttlefish ink sauce. The demonstration continues through to the desserts (cherry, melilot and verjuice, chocolate, coffee and lentils) for a total show featuring Vincent Cochard, former sommelier at neighboring Arpège.
