Gourmet Restaurant Thanks to the Gault&Millau Endowment and a great personal initiative, Keiko and Sylvain Parisot had the good idea of choosing Bellême, a charming town on the edge of the Perche and the Sarthe, to settle their bags. The young chef, who has worked with Elmer and Fulgurances, as well as Pascal Barbot at L'Astrance, has all the necessary experience to convince the locals. Together with Keiko, also a chef, he quickly adopted the region and its producers, building up a network and establishing a genuine rural resource center. The first menus are eloquent and promising: asparagus anchoïade sabayon livèche, grilled trout turnip crunching jelly and shiso condiment, braised pig's cheek carrots glazed in juice... It's already a revolution in Bellême and the two toques are in their sights.
