Chef : 1 restaurant After gaining solid experience in some very fine establishments, Sylvain Parisot opened his first restaurant, Paysages, in the Perche region of France this spring, with his wife Keiko.Trained at Ferrandi after completing his schooling in his native Yvelines, Sylvain Parisot boasts a CV to make most of his colleagues pale:a two-year sandwich course at Apicius in Paris, a few months at l'Arnsbourg with Jean-Georges Klein, two years at Lameloise in Chagny, before joining Alexandre Couillon's kitchens in Noirmoutier in 2015.
From Elmer's to Astrance

"I worked for just over two years at L'Astrance, which was still on rue Beethoven at the time, before taking up my first position as resident chef at Fulgurances. "
It was then at the helm of Jeanne-Aimée, where he joined at the end of 2021, that Gault&Millau noticed him and quickly awarded him 2 toques, for his pretty gourmet cuisine at wise prices. " But with Keiko, whom I met at Elmer's and who became my wife, we decided to leave Paris and open our own place, called Paysages, in the Perche region, on the heights of Bellême. Keiko is also a chef, and we'll be pooling our skills to offer, from spring 2025, a cuisine that pays homage to the Perche region. "
