Remarkable Restaurant What a pleasure it is to hold a reservation at Mory Sacko's, to discover his cuisine with its successful France-Africa-Japan gastronomic triptych. Two menus are available, in four or six courses. We're off to Migration, which sounds more exciting and promises more surprises. The show begins with a multitude of gourmet and surprising appetizers, before Mediterranean tuna à l'unilatérale, anchoïade sauce, burnt tomato and marjoram, followed by oshizushi with Arctic char, cucumber and kombucha beurre blanc, the "Pèpè Soup" of his childhood, mackerel, red mullet, combo, palm oil and fish and shellfish fumet, a visually and tastefully pleasing dish. There's still a little fuel left for a trip to the Sahel with Aubrac beef matured in shea butter, maffé sauce and desserts, "Le peuple peul", thiakry, pecan nuts, millet, maniguette and ribot milk and strawberry, strawberry harissa "azuki niébé", sochu, olive oil. Careful, attentive service, eclectic cellar with a choice by the glass announced by the sommelier.
