Gault&Millau's review 2021

Recently renovated, the swimming pool has been given a facelift and now offers a complete service, with hotel, bar, restaurant and superb rooftop. In terms of cuisine, while taking in the view of the capital and the pool, guests can enjoy trendy urban bistronomy, with a careful reinterpretation of tradition. The menu features an organic hen's egg with Burgundy truffle, steamed cod with marinière sauce, risotto, spelt, cockles, tabbouleh and cauliflower, 21-day-aged Montbéliarde entrecôte with mashed potatoes, and a classic baba au rhum.
