While Fred is in charge of the dining room, his young sidekick Pierre is in charge of the kitchen. Born in the Ardennes at the end of the 80s, Pierre was a commis de cuisine at Le Westminster, Le Touquet, with William Elliott and then at the prestigious Hôtel de Paris, Monaco, in the Ducasse stable, before opening Les Vieilles Canailles in 2015 .
A Jeune Talent title after just a few months in business
We immediately fell in love with this competitive bistro and rewarded the young chef with a Jeune Talent title after just a few months in business. Since then, these Vieilles Canailles have shown no signs of running out of steam, with Pierre having as much fun as ever producing a cuisine that's both bistrotière and... canaille, daring to serve pig's trotter carpaccio, hare à la royale, marrow bone with herbs or squid and black pudding.
