Jacques Bellot runs this charming 3* hotel, with spa, pool and restaurant, close to the Serre-Ponçon lake, in a beautiful natural setting. Quentin's table has all the charm of a mountain restaurant, with its traditionally-inspired wooded interior, where you'll find trout tartare from Châteauroux-les-Alpes in gravelax, avocado guacamole, soy and dill mayonnaise, black sesame and citrus fruits, red mullet lacquered with soy, shrimp bisque, coconut milk polenta, glazed carrots, Jerusalem artichoke pulp and parsnip chips, roast rack of lamb, rosemary jus, potato gratin with truffle, marrons glacés and carrot purée, tarte tatin from the Hautes-Alpes, vanilla ice cream and salted butter caramel.
