The house is evolving, and we're delighted: Matthieu Pouleur, the chef, is finding his feet in this remarkable setting, an artists' bastion of cozy Norman luxury, with a splendid view over the bay. Attentive to his environment and his producers, he now offers a genuine seasonal menu alongside his two excellent menus at €79 and €145: smoked haddock egg with white asparagus and spirulina, sole artichoke olive lamier blanc, veal zucchini anchovy basil thaï. Clearly laid-out plates, with taste and straightforwardness, right through to the chocolate cherry dessert from a pastry chef who works in perfect harmony with the cuisine. Extensive, well-balanced cellar, ciders and cocktails.
