When you think of the Hôtel Royal in Évian and its restaurant, Les Fresques, a whole world of imagination springs to mind. That of a grand hotel nestled on the shores of Lake Geneva, a witness to history, where heads of state, presidents of the Republic, artists, writers, and royalty have come and gone—and most recently, the entire G7. More than just a hotel, the Royal is part of France’s cultural heritage. One imagines the grand silver platters, the serving carts, and the carving of meat done right in front of the guest. It is a whole ceremonial tradition that has shaped the world of luxury hospitality and seen some of the greatest chefs pass through its doors, including Paul Bocuse’s father, Georges, who cut his teeth here. Yet the experience today tells a very different story. Under the leadership of new chef Yohan Fatela, alongside pastry chef Clément Pouillotte and wine director Loïc Chavasse-Frette, the team demonstrates genuine dedication, impressive technical skill, and a clear desire to excel. The cooking is spot-on, the sauces are precise, the cooking times are perfectly controlled, and everything is executed with care. However, it’s the direction the restaurant is taking that raises questions. The ship seems to have left the shores of Lake Geneva to set its sights on the Mediterranean. Is this to attract an international clientele stopping over in Évian between Monaco and Geneva? Perhaps. The fact remains that this culinary offering ultimately says very little about the exceptional region in which it is situated. The Alps are right there, the Jura is nearby, there are numerous producers, and the traditions are rich—yet they remain surprisingly understated.
