David Charrier's precision cuisine is rooted in the land: the restaurant's garden is the source of the entire menu, from the herbs on the buttered bread to the evening herbal teas. The yellow pollack confit with lemon thyme and Mikado sauce is a perfect illustration of the balance between technical mastery and taste clarity.
