In the heart of the Vosges forest, the Philippe-Witdouck chalet is a jewel of a hotel****, set in bucolic surroundings, and offering comfort perfectly integrated with the alpine style of the surroundings. Between the carved woods, the flowers, the greenery of the fir trees or, on the contrary, the white mantle of winter, the house offers a fine dining experience, a local cuisine with new ideas. Chef Hervé Cune, fresh from Sophie's gardens, aims to keep up the pace, with well-sourced dishes such as arctic char ceviche with avocado oil and herb condiment, Heimbach trout with almond butter and sautéed spinach, roast pigeon supremes with abatis thighs, spicy baked melon and reduced carcass juice, and snail cassolette with sorrel. We conclude with Thierry Mauffrey's pastries, such as creamy lemon, Genoa bread and frosted pulp, or the parfait glacé with fir tree honey and apple compote. A fine classic cellar.
