In spirit, it's a Parisian brasserie with a rather extensive catalog. In reality, it's a unique table. Unique in its setting, overlooking Paris from the seventh floor of Cheval Blanc, unique in its clientele, who want to see and be seen, while taking part in an exclusive party. Unique, finally, for the quality of its cuisine, meticulous in every detail, masterfully coordinated by Arnaud Donckele and executed by William Béquin and his firebrand brigade, who can deliver with equal precision an incredible tomato soup with crisp cucumbers, a gravlax de saint-pierre, a sole meunière with Grenoble sauce or a lamb à l'âtre jus piquillos et citron confit. Under the surface of simplicity, a very thorough technical work and a great pleasure for three beautiful toques.
