Chef's Restaurant The whole of Paris for the whole world, who can enjoy a piece of French prestige on the seventh floor of this monumental hotel. The most beautiful city in the world spreads out at the feet of the Moldavians and Brazilians, in a 180° panorama sweeping across the Left Bank from the dome of the Invalides to the towers of Notre Dame. The colorful setting, the numerous, close-knit tables and the plethora of well-coordinated service invite you to join in the festivities: the sound level rises with each passing minute, the Tower of Babel explodes with laughter and exclamations in every language, the service remains serene and distinguished for these plates that are nonetheless meticulously prepared, as if their level of finish remained paramount in the farandole. Whether it's onion gratinée or langoustines, girolles and pike quenelle, green bean and stracciatella tart, Grenoble-style sole or excellent trout creamy with yellow wine, or pigeon in crapaudine and "endiablé" jus, the Cheval Blanc hallmark is set by Arnaud Donckele's teams, who know so well how to delegate, encourage and lead while keeping an eye on everything. Desserts perfectly in keeping with the tone, from his alter ego Maxime Frédéric, classic and clever like vacherin rhubarbe, baba, strawberry sablé tart, thick and greedy with raw elderberry cream. Everything you want is in the cellar, and in fact everything you want is available.
