The rebirth of Audrieu, now back among Calvados’s finest gourmet restaurants, will delight all those nostalgic for this 18th-century château, which is regaining its luster thanks to new management and a chef who has been at the helm for four years, Samuel Gaspar. With the support of culinary heavyweights (notably Stéphanie Le Quellec and Giuliano Sperandi of Taillevent), the chef has fully adapted to the kitchen, the charms of the bocage, and its local ingredients; solid technique, clean and precise cooking, and undeniable talent for sauces now propel the restaurant into the two-toque category: a beautiful plate of seasonal vegetables (“the bucolic plate”) with a pearl-like sage jus; lobster with a rich bisque, chanterelles, apricots, almonds, and verbena; and impeccable turbot with green beans, potatoes, seaweed coulis, and sauce suprême. The menu as a whole may not be particularly daring, but it’s clean, promising work that appeals to a traditional tourist clientele—particularly from the English-speaking world—and concludes with a delicious peach and verbena dessert. There is still quite a bit of work to be done on the restaurant’s modernization—the dining room and wine cellar, in particular, could use a good refresh—but the foundations are there, with a young, well-organized service team.
