Chef's Restaurant Christophe Chiavola, used to working in top-level kitchens, took over the table at Le Prieuré (from Jean-André Charial's group) at a moment's notice, following the departure of Marc Fontanne. He has succeeded in simplifying the menu and adapting it to the superb, historic setting. A clear, contemporary menu, representative of an open-minded spirit, blending fashionable products with the latest discoveries: red tuna and beef broccoli, gomasio, ginger, raspberry carrot, lobster with raspberry bell pepper and satay tomato, lacquered pigeon, porcini mushroom, Camargue oyster, full-bodied jus... Desserts in the same vein, with apricot (savory hay with almond cookie) or fennel with apple. The "Découverte" menu at €95 is a good introduction, and the cellar is of course a strength, with the best of the Rhône, and the third toque should be back very soon.
