Remarkable Restaurant We're delighted that William Elliott has regained his zest and outlook. If haute gastronomy was put on hold for a while at the Westminster, it seems that the flagship of the Touquet fleet is regaining its colors, and this beautiful Salicorne menu at €100, full of freshness and imagination, proves it: langoustine in tomato water with Thai basil and olive condiment, wild sea bass in leaf-onion citrus caviar, red mullet "tarama végétal" with gooseberry and bone juice, sweetbreads with Paimpol cocos, seaweed butter, brousse and samphire... A great show, the right flavors, a very high standard and a cheerful atmosphere in this beautiful "Westminster" dining room, with impeccable service. The three toques are naturally returning this year.
