William Elliott can be proud of his solid position: the flagship is doing well, attracting a lot of attention at the entrance to the resort. In this pretty, chic setting, he has the means to showcase his fine technique in the service of a noble, proud cuisine: Audresselles lobster with cherry almond and vinegar jus, raw langoustine marinated in melon and squid ink, yuzu and lemon verbena, wild sea bass in cockle marinière, Limousin veal chop with chanterelle mushrooms and figs. The inspiration is there, in its classic and delightful form, right through to the dessert of seasonal mirabelles, in a beautiful, excellent-value menu at €120. A menu of fine labels, dedicated and reliable service.
