Prestige Restaurant Franck Putelat is a super pro who combines talent with personality. He's so technically sound that he can indulge the whims of the moment. He can twist classics (cassoulet, melon jambon) by changing the codes in his own way. Finally, he's a responsible owner who's at home, pleasing his customers without forgetting to say hello, and pampering gourmets with far-from-palatial prices. Yet the house is beautiful and elegant, as is the welcome, at the foot of the Citadelle, in a quiet, privileged corner. The team is in place, smiling and attentive. And the maestro brings out the farandole with the same aptness, the same exacting attention to every detail, from the olive oil to the bread, whose flour comes from the Cucugnan mill, worked by a local baker and baked on site. Recently, we were treated to his median lunch menu: €115 and what a feast! Potato crisp, octopus tartlet and garlic emulsion, vitello and trout for appetizers that sweep the spectrum of textures, Mediterranean galley aspic (squilla), burnt lettuce, quail egg, duck ham for an anthology of flavors, perfect, pearly-cooked pollack, zucchini fleur, basil, lard gras, jus de fleur. The cassoulet revisited, with pigeon cooked in the devil's oven with beans, carved on the pedestal table, is a great moment, with Castelnaudary beans, tuna worked like ham and the pigeon's leg confit. Pleasant "emotional sequences" in 3 courses, pre-dessert and beautiful melon inspiration, Iberian ham powder and cream, yellow wine granita. Extensive wine cellar covering the Corbières and all the vineyards around Carcassonne, well advised and fairly priced.
