Remarkable Restaurant More than a vineyard, Château de Berne is a small village hidden behind the estate's walls, a Garden of Eden that you walk through for fifteen minutes or so amidst the vines before coming into view of the château, hotel, villas, winery and terraces. Away from it all, and more than ever in Provence, the house promises an experience of discreet luxury that continues in the plates of Louis Rameau and Éric Raynal, elegant compositions on paper and in execution, where we find all the pleasures of the Mediterranean. Tomatoes in French toast with thyme-roasted tomato vinaigrette; cucumber and Tamaris oyster tartar with Neuvic caviar; slow-cooked trout with crisp radish, leaf pesto and elderflower beurre blanc; a Mediterranean red mullet, rock soup and aniseed sabayon, basil; for the signature dish, confit farm lamb in a bread crust, crispy celery, black garlic cream and lovage perfume, and a fine chocolate dessert, creamy jivara with tonka bean, crispy Piedmont hazelnut cookie, ice cream and La Durance whisky. To accompany, wines from the estate and some of the great names.
