Chef's Restaurant In the idiosyncratic, bucolic setting of Bois des Chambres, Victor Villatte is now at the helm of Le Grand Chaume. Like the place itself, the menu remains committed and atypical, with an exclusively Loire-based wine list, local sourcing and a largely plant-based cuisine, conceived with conviction. With a lower pricing policy, the restaurant aims to appeal to a wider audience. While this means more modest products and sometimes more direct execution, the creative intent remains strong and the plates well-balanced. A case in point is a polenta with parmesan and elderberry, justly peppered, accompanied by a play on broccoli in three textures - velvety, raw and grilled - which could even reconcile meat lovers with vegetables. On the sweet side, the combination of tart black fruit, blackcurrant pepper cream, crispy tuiles and a surprising tarragon sorbet makes for a lively, fresh and gourmet dessert, very much in the spirit of the house. In the dining room, a young, motivated team accompanies the experience with kindness, even if the service still lacks confidence.
