A successful handover for Amy and Samuel at what remains the Pays d'Auge's most renowned country restaurant. The young Dutch-born chef has integrated the Normandy terroir well, and does quite well with fish and seafood, in a modern, personal vision: creamy crab, granny smith and citrus bisque emulsified with tandoori spices, Dutch eel gnocchi with dashi herbs and kombu, roasted monkfish with hazelnut butter, peas, chanterelles, rhubarb and wild garlic emulsion. The large €75 menu is well thought-out, with interesting choices throughout, right down to the seasonal desserts, such as "l'ode à la fraise" (ode to strawberries). The dining room is pretty and lively, and the service follows with gusto. The cellar still has room to grow.
