Presentation

Born into a gourmet family in the Netherlands, Amy Terbrack discovered cooking at her grandmother's side. Together, they prepared Greek dishes, as well as recipes from Great Britain.

An early vocation

Lost at school, she joined a private cooking and hotel school at the age of 15. She obtained a double diploma before starting out as a trainee in a restaurant in Haarlem. Amy went on to work in a number of different establishments to perfect her skills: "I was working everywhere at once... I just wanted to be the best chef ever! "she laughs.

After a difficult period, marked by a frantic pace and an accident that forced her to take a break, Amy met her partner while they were both working in Paris. Together, they took over Le Dauphin in Le Breuil-en-Auge in early 2024, an establishment they fell in love with.

Seafood at the heart of her cuisine

Amy draws her inspiration from the sea, the Nordic countries and her travels. With her partner, she draws up a constantly evolving menu: "We like to work with the seasons, and above all, we try a lot of things. "The chef highlights products such as eel, popular in the Netherlands but less so in France, as well as shellfish and fish, arriving directly from Honfleur or Trouville. She also designs a highly successful pastry and catering menu.

Her work was rewarded with the Trophée Cuisine de la Mer, des Lacs et des Rivières at the Gault&Millau Tour Normandie 2026: "I didn't expect it at all, we're very busy, so I didn't think anything of it. But I'm very proud of it. "
