The service, orchestrated by an attentive maître d’hôtel and a precise team of servers, immediately establishes a relationship of trust. Brioche-wrapped sausage with bacon sauce opens the meal with lightness and precision, followed by a remarkably executed Troisgros-style trout with sorrel, where the tangy freshness of the sauce complements a creamy mashed potato purée made with chicken jus. The Grand Marnier soufflé, light and airy, concludes the meal with panache.
