The arrival in 2022 of Glenn Viel, who co-designs the menu for the gourmet restaurant in this pretty little hotel complex (actually several charming houses scattered around the village), has obviously shone the spotlight even more on this charming house at the foot of old Grignan. On a daily basis, Benjamin Reilhes and multi-award-winning pastry chef Cédric Perret are responsible for spreading the word of Baumanière's star chef, with a cuisine full of vitality and personality, from the lovely trout and its crispy skin, to the "slightly chubby" red mullet married to foie gras and drizzled with a rock fish broth, before the rhubarb just cooked in its own juice and Cédric Perret's icy extraction with hints of bourbon. A fine Rhone cellar.
