Chef : 1 restaurantAdrien Pollet's gastronomic story began in 2011, at the hotel school in Thonon-les-Bains. It was there that he met Charline, his future partner. With their diploma in hand, the two young people set off for Australia. The experience lasted a year, during which they explored different restaurants and took advantage of the opportunity to travel.
On their return to France in 2017, Adrien Pollet returned to his native La Clusaz in Haute-Savoie, where he started out at the Au Cœur du Village restaurant. The couple then joined Jean-André Charial at Le Prieuré, Villeneuve-lès-Avignon. "It was intense. It helped us mature," he recalls. In 2018, Daniel Baratier will head for the Auberge Sur-les-Bois in Annecy-le-Vieux.
In 2020, aged just 24, the couple opened Le Cairn, a restaurant in Saint-Jean-de-Sixt (Haute-Savoie). The Jeune Talent trophy awarded to them by Gault&Millau during the Tour Auvergne-Rhône-Alpes in 2022 brought them a little more fame. "It's created real word-of-mouth. Our customers come from further afield", enthuses the chef.
