Lisa VUILLEMIN
Pastry Chef : 1 restaurantIt was during her apprenticeship with Christopher Coutanceau that Lisa Vuillemin had "therevelation". She then took a BTM (brevet technique des métiers) at Chez Fred bakery on the Ile de Ré. "We worked with chocolate, croquembouche... I learned all the basics of pastry-making."
In 2010, she joined the Park Hyatt Vendôme as commis pâtissière, then as demi-chef de partie. "I could have been a chef de partie, but I wanted to see something different and return to my native region," she explains. So back to Franche-Comté, where she teaches pastry to individuals and children.
Then, in 2013, she joined Maison Jeunet, in Arbois (Jura), where she met her husband, Jérôme Brousseau. From chef de partie, she became head pastry chef."The product was very important, I learned to work with it from A to Z, without losing anything."
In 2019, Lisa Vuillemin and Jérôme Brousseau decided to take over Le Bistronôme, in Arbois. "We wanted to create our own restaurant, so we took the plunge!"She never expected to be awarded the Pâtissier Bourgogne-Franche-Comté 2022 trophy. "I've never looked for recognition or to put myself forward, so it's great that everything we do here is recognized."
